I found this recipe on Instagram a while ago. It's a nice one pot creamy pasta dish.
Cook 1 lb pasta (I like fusilli)
In the meantime, stir 1c ricotta, 1c grated or shredded parmesean, the juice of 1 lemon, the zest of 1 lemon, (optional: chopped parsley) and black pepper to taste.
(Optional: 1 minute before the pasta is done, add several handfuls of baby spinach and stir)
Add 1/2c pasta water to the sauce
Drain pasta
Combine pasta and sauce
Optional: Serve with pine nuts
