I haven't been cooking anything interesting (or successful) lately, so I'm posting a photo of one of Mom's and one of Jody's dishes--stuffed acorn squash and sweet potato fries. They were delicious--thanks for the recipes, ladies!

I'm afraid to look up the calorie count on the sweet potato fries.
Made the stuffed acorn squash on Mar 4 - - with beets (roasted & diced) instead of carrots. I only used the sweet spices (omitted the coriander & cumin, which seemed like a better fit with carrots). And in place of apple juice I sauteed 1/2 apple in roasted almond oil.
