What to do with beets?
They came in my CSA box. I generally dislike them. Any ideas?
I had a salad like Suzanne suggests in New Orleans, with roasted beets, sliced. THe other day at Le Pain Quotidienne (newly installed across the street from school) I had a farro salad with shreds of beet and cucumber. You could substitute barley, since I think you told me that farro has gluten.

I used a puree of beets to color cauliflower for Christmas once. Epicurious.com has a recipe for spice-roasted cauliflower with beet emulsion.
