Sweet Potato Sticks

Peel and cut 2 sweet potatoes into fat french fry shapes. Put them on a baking sheet lined with parchment. Cover with about 1/4 c. olive oil and sprinkle on 1 tsp. salt, 1 tsp. pepper, 2 or 3 minced garlic cloves, and 1/2 tsp paprika. Roast in a 450 oven for about 25 minutes or until the edges start to crisp and blacken, turning once with a spatula halfway through.

I love sweet potato fries! I can buy them pre-made at a place down, but I make them in my oven a lot. I prefer the half moon version because I find them easier to cut and easier to use as vehicles for my various greek yogurt dip concoctions. I find I have to cook them longer than you - about 20 mins on each side. But then again, I never really know the temperature of my oven (aka the fiery a**hole of satan) since my high temp thermometer broke.

Half-moons sound good. Cooking time probably also depends on how thick they are. Even with the garlic, paprika and pepper they were SO SWEET! The recipe I worked from called for 5 potatoes and 1 cup of salt!!! Can't imagine what that would taste like.

I would regret having a fiery a-hole of anyone in my kitchen.
