The Kale Quest

As Suzanne has been hearing for the last two nights, I'm committed to culinary concentration on kale. It has by far and away the highest amounts of lutein and zeaxanthin, which when ingested embed themselves in the retina and protect photoreceptors. So - - go blog!! I used the search function for the first time and came up with Suzanne's April post about noodles with kale, asparaus and tahini sauce. Will do!

yay!! I really think the Kale made that dish. I made it again later sans kale and twas not nearly so good

I have a hard time finding good kale this time of year :(.
Is arugula or spinach good, too? There's plenty of that right now.

Arugula - - I don't know. It depends on how much lutein and zeaxanthin it has. Spinach has about half as much as kale, but it comes in second in the standings. So spinach in any form is great. The less cooking the better. THe other things are distant thirds - - Broccoli was next. Corn is good too, but seems to me not good enough to coronate it. THis comes from that book I got AU to get for me - - Food and Nutrients in Disease Management, Ingrid Kohlstadt, editor, the first chapter of which is on AMD, therefore on retinal health. It says that these two pigments get picked up in the retina, and the higher their density in the retina, the less damage people get from AMD. And it's not a cause/effect question, as best as I can tell: dietary change produces density change.
